Nutrient fortification is the addition of vitamins and minerals during the processing stage that the juice concentrate goes through. For example, research shows that a 1 cup serving of apple juice concentrate which has been through the fortification process fulfils the entire daily vitamin C requirement, whereas a 1 cup serving of fresh apple juice contains just 17% of the daily vitamin C requirements.
