From Sicilian Lemonade, salad dressing to a natural ph control in food dishes , the products have a wide range of uses. 

Sicilian lemons are grown in the foothills of Mount Etna, the lemon plants find the perfect equilibrium of the natural elements and resources: the richness of the earth, the climate where the sun and the rain are in harmony, and time flows slowly permitting the fruit to ripen in the warmth.
It takes a lot of patience to care for the citrus plants with the first fruit maturing about six years after grafting and the complete maturity reached after 10 years.  The lemon tree will continue to produce fruit for several decades.

Recent studies show that Lemons have a high Vitamin C content, an element that helps in the prevention of heart attack, stomach tumours and to reduce the effects caused by smoking.
Lemons have a wide use in cooking and are well-known for their preserving and anti-oxidising properties.

At the same time the organoleptic and chemical-physical characteristics, thanks to the mild Sicilian climate, are unique. 

Historically, in the past centuries, the region of Sicily was the first to cultivate lemons.  Today, there are many other countries that cultivate lemons, often larger quantities, but Sicilian lemons are deemed to be superior in taste, aroma, colour and in their organoleptic characteristics to other sources. The main crop normally starts in November and ends in April, and this season was late due to the cold blasts that ventured into southern Europe in January. There was snow across Southern Italy and across Sicily which was highly unusual.  The main crop started in earnest towards the end of February, the cold weather having seemingly only delaying the crop, and volume and quality of the fruit should be unaffected.

NFC stands for ‘Not from Concentrate’ which no doubt you will have noticed written on the fruit juices in your local supermarket. 

What is the difference between Concentrate and NFC Juices?
For many years people have been left confused about the difference between concentrate and not from concentrate juices, so we are here to let you know once and for all what the differences are! 

Not from concentrate
For juices such as orange or apple juice to be labelled as “not from concentrate” all of the water in the product must be kept. The NFC juice process involves pasteurising the fruit, extracting any oils from the peel and then adding to the juice afterwards to add to the overall flavour. 

From concentrate
The only difference with this process is that the water is removed from the fruit so that it can be sold either as a pure form, or water is re-added at a later stage. One of the benefits of a from concentrate juice is that it is easier for companies to transport and ship.
