​Creating Agave Syrup

Agave syrup is produced from the Agave americana and Agave tequilana plants. These plants will need to have been growing for seven to fourteen years, after which the leaves are cut off the plant. The juice is then extracted from the pina (which is the core of the agave), and filtered and heated. This filtering and heating process breaks the components into sugars. The filtered juice is then concentrated to make a syrupy liquid, which looks like honey but is of a thinner consistency. The colour of the syrup will depend on the degree of processing; it varies from light to dark amber.

Agave Syrup taste
Agave syrup has a unique taste. It is sweeter than sugar and very similar to the taste of honey, although the consistency is thinner than honey and it has a more neutral flavour. It also lacks the bitter aftertaste that you get with some natural sweeteners.
